Coconut Drops
These are a McQueen family favourite and remind our Granny of the sweets she had when she was little. We love them almost as much as we love our Big Granny!
- 1 medium coconut, skinned and chopped into chunks or pre-hopped coconut chunks
- 990g light brown sugar
- 1 cinnamon stick
- 840ml water
- 5cm knob of ginger, grated
- 录 teaspoon salt
- 1 teaspoon of vanilla extract
Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...
MAKES 25
1. Pour the water and cinnamon stick into a large saucepan over a high heat. Place on lid and wait until it鈥檚 very bubbly.
2. Once it鈥檚 boiling, add the coconut and ginger. Give it a stir and leave It to boil for ten minutes.
3. Using a spoon, carefully remove the cinnamon stick. This will be very hot! Leave the rest to boil for another 40 mins, stirring now and again.
4. Add the light brown sugar and boil for another 25-30minutes until its syrupy and sticky. Carefully stir in the vanilla and salt.
5. Carefully spoon the coconut drops on to a baking sheet lined with baking paper. Leave to cool and firm up.
