Make Ching鈥檚 veggie prosperity dumplings
Get your tastebuds tingling this Lunar New Year by learning how to master these top-notch and very delicious dumplings with the incredible chef Ching-He Huang!
- 50g smoked tofu with sesame seeds, drained, rinsed in cold water and cubed
- 40g firm tofu, crumbled
- 60g long-stem broccoli, stems finely chopped
- 2.5cm piece of fresh root ginger, grated
- 1 spring onion, trimmed and finely chopped
- 录 tsp salt
- 录 vegetable stock cube, grated
- 录 tsp golden caster sugar
- 录 tsp white pepper
- 陆 tsp toasted sesame oil
- 陆 tsp sea salt
- 1 tbsp vegetarian mushroom stir-fry sauce
- 10 sheets gyoza dumpling skins
- Spring onion slices (for garnish)
- Red chilli julienne strips (for garnish)
- Coriander leaves (for garnish)
If you like meat and prawns, you can substitute the tofu for chopped prawns and minced pork. Enjoy!
Method
First up, mix your tofu, broccoli florets, stems, grated ginger and spring onion in a bowl until well combined.
Put your dumpling skins and anything you will be using for garnish to one side, and then add rest of the ingredients to your mix.
Now for the fun part! Place a dumpling skin in the centre of your palm, and scoop two generous teaspoons of your vegetable mixture in the middle of the skin.
Wet your fingers and carefully run them around the edge of your dumplings, then fold one half of the skin over and press the edges together so they stick. Repeat this process until you have used all of your skins and mixture.
GRAB A GROWN-UP and fill a medium pan with water and bring it to the boil. Carefully place all the dumplings into the boiling water making sure not to splash the water, as it's really hot!
Cook your dumpling for around 2-3 minutes, stirring them occasionally. You will know they are ready once they've all floated to the surface, how cool is that?!
With the help of your grown-up, carefully lift all of your dumplings from the pan using a slotted spoon, and put them into bowls.聽
Finish them off with a garnish of finely chopped spring onions, red chillies and coriander.聽
