Disa's Swedish Cardamom
Help your child make Disa's tasty cardamom with this quick and simple recipe. Serves 4.
- 60ml milk (warm)
- 1 dessert spoons (dsp) runny honey plus extra for glazing
- 7g sachet of dried active yeast
- 125g strong white bread flour
- Pinch salt
- 70g melted butter
- 10 green cardamom pods
- 15g soft brown sugar
Method

Into a jug of warm milk add the honey and yeast and stir. Put to one side to start bubbling
Weigh the flour into a large bowl. Add a pinch of salt
Add 50g of melted butter to the frothy milk mixture and stir
Gradually add the milk mixture to the flour, a little at a time until it all comes together into a dough. Lightly sprinkle flour over the surface then tip out the dough. Knead the dough by pushing and pulling until smooth and stretchy. Shape into a ball, put back in the bowl and cover with a clean towel and leave in a warm place till the dough doubles in size
Using a pestle and mortar (or a bowl and the end of a rolling pin), bash open the cardamom pods. Take out the skins and leave all the seeds. Grind the seeds into a powder as much as you can
Next put half the ground cardamom into a bowl with the brown sugar and stir
Take the risen dough out of the bowl and put on to a lightly floured surface. Flatten the dough with your hands then sprinkle over the other half of the ground cardamom. Push and pull the dough to mix the cardamon in
Roll out the dough with a floured rolling pin (so it doesn’t stick) to large rectangle (about 15cm by 30 cm)
With the short sides of the rectangle top and bottom, brush some of the melted butter gently all over the surface of the dough then sprinkle the cardamom sugar mixture all over
Fold the dough in half by pulling the top down to meet the bottom edge. Sprinkle with a little more flour and lightly roll up and down to press layers together
Trim one side of the dough to get a straight edge then cut 4 even strips using a table knife (you may want to neaten up the other side too)
Holding one end of a strip on the surface with your fingertips, roll and twist the dough carefully (so it doesn’t break)
Wrap the end around your finger tips and tuck the it underneath, making a knot. Repeat to make 4 buns and put onto a greased baking tray. Brush with a little more melted butter
Cover with a greaseproof paper and leave in a warm place for 30 minutes so the dough has time to rise
Ask a grown up to put them in the oven 175°C degrees for 25 – 30 mins till risen and golden.
Once they have cooled, brush with some runny honey
