Emelio's Cyprus Homemade Pitta and Halloumi Kebabs

Help your child make Emelio's tasty halloumi kababs and homemade pitta with this quick and simple recipe. Serves 4.

You will need
  • 75ml warm water
  • 5g dried active yeast
  • 125 g strong plain white bread flour
  • Large pinch of salt
  • 3 dessert spoon (dsp) olive oil
  • 3 dsp runny honey
  • 4 dsp olive oil
  • 1 dsp dried oregano
  • Juice of half a lemon
  • 1 red pepper
  • 120 g of halloumi

Method

For allergens, see ingredients in bold.

  1. Pour cold water over 4 wooden skewers and put to one side to soak

  2. Into a bowl of flour, add the yeast, add a large pinch of salt and then make a well in the middle. Pour the water into the dip and measure in 3 dessert spoons of oil. Mix well with the spoon and then turn the dough out on to the surface

  3. Knead for about 10 mins until you have a smooth ball. You shouldn鈥檛 need any extra flour. If you need any more moisture, add another drop of oil

  4. Put the dough back into the bowl and cover with a clean tea towel and leave to double in size a warm place (about an hour)

  5. Pop the pepper then remove the core and the seeds. Tear the pepper up into 12 pieces, put into large bowl

  6. Using the bridge method and a table knife, cut the halloumi up into about 8 cubes, put into the bowl with the pepper

  7. Measure 4 dsp olive oil put into a jug, add the oregano and honey, squeeze in the lemon juice and stir. Pour the mixture over the halloumi and pepper pieces and stir everything together then put to one side

  8. Take the bread dough out of the bowl and put it on to a lightly floured surface. Take the ball of dough and break it in half, then half again to make 4 equal pieces. Shape the pittas by flattening each piece with your hand and then rolling out with a rolling pin until each is an oval shape just bigger than your hand (about 13 cm by 8 cm)

  9. Put the pittas onto a lightly floured baking sheet. Put to one side, cover with the tea towel again

  10. Take the skewers out of the water and dry them with a clean tea towel. Thread 2 pieces of halloumi and 2 pieces of pepper onto each skewer and put the skewers onto a lined baking tray

  11. Ask a grown up to put both baking sheets in a hot oven 260掳C oven for about 4 minutes. The pitta will puff up and the haloumi will go a golden brown

  12. Let the kebabs and pittas cool and serve with some fresh cucumber and carrot batons
