Harry鈥檚 Lithuanian Kugelis
Help your child make Harry's tasty Lithuanian kugelis with this simple recipe. Serves 4.
- 2 eggs
- 350ml milk
- 4 spring onions
- 6 bacon rashers, cooked and chopped
- 6-8 twists of black pepper
- 10g semolina
- 650g red skinned potatoes, peeled and chopped set in bowl of cold water to help stop them turning brown
Method

Break an egg into a mug, check for shell then beat with a fork and add to a large mixing bowl. Repeat to break 2 in total. Don鈥檛 forget to wipe your hands.
Pour 350ml milk into the bowl and mix well with eggs using the fork.
Top and tail 4 spring onions and then chop into small pieces with scissors. Add to the egg mixture. Add 6-8 twists of black pepper. Mix well together.
Sprinkle the base of a pre-greased baking dish with 10g semolina, to give a nice crunchy base.
From 650g peeled and chopped potatoes, take a small handful of potato, dry on a clean tea towel then grate onto another clean tea towel. Squeeze the moisture out of the grated potatoes, then add the dry, grated potato to the egg mixture in the bowl and stir. Repeat till all the potato is used up. Stir each time to help stop the potato from going brown. Finally add 6 rashers bacon, cooked, cooled and chopped, to the mixing bowl.
Gently pour the mixture over the semolina. Press the potato down evenly all around the dish. Use a dessertspoon to help you.
Get an adult to put the Kugelis into the oven at 180掳C for 45-50 minutes or until golden all over, set firm and cooked through. Allow to cool a little before serving.
