  can you freeze tofu? Just realised the big block in the fridge needs to be eaten by tomorrow and it doesn't say on the packet whether it'll freeze or not. Presumably if not I'll need to knit some yoghurt out of it?

  Anything will freeze,whether or not it will defrost successfully I don't know. ( Don't use Tofu myself).
  
  What is affected is the texture, which is why Cucumbers are disgusting when defrosted but raspberries are useable and almost like fresh. That is all to do with the water content.
  
  Freezing and defrosting does not alter the chemical composition and make the food poisonous but it may make it disgusting. Cheese freezes and looses something in the process, but still can be used in cooking . HTH SFAnneâ„¢

  Hope you find some time to keep posting. I follow your posts in MFC and elsewhere with interest and hope that you soon find some calm waters. Don't give up on the challenge. Planning is the key when you can. And perseverence.
  
  And don't be set back by the success of others. You are you - and will do it in your time and your way. It's so easy for some of us to be zealous about our own regimes and successes but we can't sell them lock stock and barrel to anyone else.
