The young leaves of Jack-by-the-hedge are nice at this time of year. Sometimes when I am weeding the allotment I wonder if I should leave some 'weeds' to grow to harvest them! They're free, are hardy, have escaped the slugs, and require no work at all!
Young dandelion leaves are good in a salad, slightly bitter like rocket, ground elder tips make a good tea for aches and pains, and help you to sleep better, (that is true, my son suggested it and it really does work), I believe you can eat chickweed as a salad veg., but some things may be positively dangerous so please do take care when trying things out - find what information you can before trying.
