Bombay mix recipes
Bombay mix is an Indian snack consisting of a medley of dried, spiced ingredients. Although mixtures differ, a typical Bombay mix may include fried chickpea flour noodles (sev), chickpeas, dried peas, flattened or puffed rice, fried onion, fried lentils and nuts. The mix is seasoned with a pungent and salty spice blend often made from ground cumin, ground coriander, turmeric, chilli powder and salt. Bombay mix is known as chevda in India and chanachur in Bangladesh.
Storage
Store Bombay mix in an airtight container for up to one week.
Preparation
The most important component of Bombay mix, chickpea flour noodles (sev), are made from a laborious process involving a special perforated brass utensil known as a seviya. A thick mixture of chickpea flour, oil, spices (such as asafoetida) and water is passed through the utensil straight into vats of hot oil to fry. Ready-made sev are available from most Asian grocers.
