Flash-fried salmon with yellow pepper and onion salsa

Method
For the salmon, heat the oil in a small frying pan over a high heat and fry the salmon slices for 20 seconds on each side, or until just cooked through.
Remove the salmon from the pan to a serving plate and squeeze over the lemon juice.
For the salsa, mix all the salsa ingredients together in a bowl and serve with the salmon.
