Easy pea and mint soup

This tasty pea and mint soup is ready in minutes and makes a wonderful summer lunch.

Ingredients

  • olive oil: 1 tbsp olive oil
  • red onion: 陆 red onion, peeled and diced
  • garlic: 2 garlic cloves, peeled and crushed
  • vegetable stock: 陆 pt vegetable stock
  • mint: handful fresh mint
  • peas: handful fresh peas
  • cream: drizzle cream
  • black pepper: salt and freshly ground black pepper

Method

  1. Heat the oil in a saucepan and saut茅 the onion and garlic for 2-3 minutes, to soften.

  2. Pour in the stock and bring to the boil. Add the mint and peas. Reduce the heat and simmer gently for 8-10 minutes.

  3. Transfer the mixture to a liquidiser and blend until smooth.

  4. Return to the pan to warm through and add the cream, salt and freshly ground black pepper.

  5. Ladle into soup bowls to serve.
