Petit pois à la Francais

Ingredients
- 3 slices bacon, finely chopped
- 1 garlic clove
- ½ onion, finely chopped
- 100ml/4fl oz double cream
- 110g/3½oz frozen peas
- 1 little gem lettuce, leaves separated
- salt and freshly ground black pepper
- 2 tbsp chopped fresh parsley
- 3 slices bacon, cooked until golden brown
Method
Fry the chopped bacon in a large deep pan until it begins to brown. Add the garlic and onion and cook gently for two minutes, then add the cream and peas and bring to the boil.
Add the lettuce and boil for one minute, seasoning, to taste, with salt and freshly ground black pepper.
To serve, pour into a bowl, sprinkle with the parsley and top with the cooked bacon slices
