Red berry iced tea

A tasty iced tea that will cool you down on a hot summer’s day.
Ingredients
- berry: 4 red berry flavoured teabags
- 568ml/1 pint freshly boiled water
- lemongrass: 1 lemongrass stalk, bruised
- lime leaves: 2 lime leaves, bruised
- redcurrants: 400g/14oz mixed red berries, such as strawberries, raspberries, redcurrants
- honey: 2 tbsp honey
- ice
Method
Put the teabags in a heatproof bowl, pour over the boiling water over and leave to brew for 5 minutes. Allow to cool.
Add the lemongrass, lime leaves, 200g/7oz of the berries and honey and mix to combine. Add 300ml/10fl oz of water and stir.
Place in the fridge to chill for 1 hour.
Serve over ice with the remaining berries.
