A tasty iced tea that will cool you down on a hot summer’s day.

Ingredients

  • berry: 4 red berry flavoured teabags
  • 568ml/1 pint freshly boiled water
  • lemongrass: 1 lemongrass stalk, bruised
  • lime leaves: 2 lime leaves, bruised
  • redcurrants: 400g/14oz mixed red berries, such as strawberries, raspberries, redcurrants
  • honey: 2 tbsp honey
  • ice

Method

  1. Put the teabags in a heatproof bowl, pour over the boiling water over and leave to brew for 5 minutes. Allow to cool.

  2. Add the lemongrass, lime leaves, 200g/7oz of the berries and honey and mix to combine. Add 300ml/10fl oz of water and stir.

  3. Place in the fridge to chill for 1 hour.

  4. Serve over ice with the remaining berries.
