Smoky bacon and tomato soup

Ingredients
- 1 tsp olive oil
- 陆 onion, chopped
- 2 garlic cloves, chopped
- 4 slices bacon, chopped
- 陆 pint chicken or vegetable stock
- 2 tomatoes, chopped
- 2 tbsp tomato pur茅e
Method
Heat the oil in a pan and gently cook the onion and garlic for 3-4 minutes or until softened.
Add the bacon and cook for a further three minutes.
Pour over the chicken or vegetable stock and add the tomatoes and pur茅e. Cook for five minutes.
With a hand blender, blend the soup until it's smooth.
Serve warm.
