Spicy chicken salad
The spicy dressing for the salad works well with all kinds of salads, including a green or salmon salad.
Each serving of this dish provides 200 kcal.

Ingredients
- 100g/3½oz roasted chicken breast, roughly chopped
- 1 celery stick, thinly sliced
- 1 spring onion, thinly sliced
- 25g/1oz red pepper, thinly sliced
- 25g/1oz fennel, thinly sliced
For the dressing
- 1 tbsp sweet chilli sauce
- 2 tsp white wine vinegar
Method
To make the dressing, whisk together all the ingredients.
In a small shallow bowl, toss together all the salad ingredients.
Pour over the dressing and serve.
