Spinach-filled mushrooms with grated cheddar

Method
Preheat the oven to 200C/400F/Gas 6.
Heat one tablespoon of the olive oil in a frying pan and fry the garlic for one minute.
Add the spinach and cook for 2-3 minutes, or until just wilted. Season, to taste, with salt and freshly ground black pepper.
Place the mushrooms stalk-side up on a baking sheet and drizzle each one with a tablespoon of olive oil.
Divide the spinach between the two mushrooms and top with the grated cheese.
Bake in the oven for 3-4 minutes, or until the cheese is melted and golden-brown.
To serve, place each mushroom onto a small serving plate.
