Barbecue strawberry skewers with chocolate sauce

A fabulous way to finish your barbecue: griddled strawberry skewers, cooked very quickly so the fruit just begins to caramelise, served with a rich chocolate dip.
You will need 4 wooden barbecue skewers.

Ingredients
- strawberries: 20 strawberries (about 250g/9oz), hulled and halved
- caster sugar: 1 tsp caster sugar
- black pepper: freshly ground black pepper
For the chocolate sauce
- dark chocolate: 100²µ/3½´Ç³ú dark chocolate, finely chopped
- double cream: 150ml/¼ pint double cream
- passion fruit: 1 passion fruit, seeds only
- allspice: ½ tsp ground allspice
Method
Soak 4 wooden skewers in cold water for 1 hour.
Thread the strawberries onto the skewers, sprinkle with the caster sugar and some freshly ground black pepper and set aside.
To make the chocolate sauce, place the chopped chocolate in a heatproof bowl.
Heat the cream, passion fruit and allspice in a saucepan and bring to a gentle simmer; as soon as tiny bubbles start to form at the edges, turn off the heat. Pour the cream over the chocolate, leave it to sit for 1 minute, then whisk until smooth.
Place the strawberry skewers on the barbecue and watch them like a hawk – you want them to just catch and caramelise, so turn them after 30 seconds to a minute. Remove to a platter and serve with the chocolate sauce to dip.
