Stuffin' muffins
Lucky enough to have leftover stuffing? Skip the sandwiches and transform it into a brilliant Boxing Day breakfast.
Ingredients
- leftover stuffing
- 6 free-range eggs
- non-stick spray
- 1 tbsp milk or cream
- salt and freshly ground black pepper
To serve (optional)
- leftover ham
Method
Preheat the oven to 180C/160C Fan/Gas 4.
Spray 6 ramekins with non-stick spray.
Divide the stuffing equally between the ramekins. Then crack an egg on top of the stuffing. Add 1 tablespoonful of milk or cream to each ramekin and season with salt and pepper.
Place the ramekins in a deep baking tray and fill it partially with boiling water.
Bake for 10-15 minutes until the eggs are set.
Serve with leftover ham for brilliant Boxing Day breakfast.
