Vegetable stir-fry with chilli and garlic pork

  1. Place the sliced pork into a bowl with the chilli flakes, a dash of olive oil, salt and freshly ground black pepper and garlic. Stir well and leave to marinate for ten minutes.

  2. Heat a wok, add a dash of olive oil and stir fry the pork for 2-3 minutes, then remove to a plate.

  3. Add a little more olive oil to the wok and return to the heat. Add the onion, carrot and leeks and stir fry for three minutes. Return the pork to the wok and stir well.

  4. To serve, pile the stir-fry into a serving bowl.
