Watercress soup with crisp bacon

Ingredients

  • olive oil: 1 tbsp olive oil
  • butter: 25g/1oz butter
  • onion: 陆 onion, finely chopped
  • garlic: 1 garlic clove, finely chopped
  • vegetable stock: 300ml/10fl oz vegetable stock
  • double cream: 50ml/2fl oz double cream
  • watercress: 75驳/2戮辞锄 watercress

To serve

  • bacon: 1 rasher smoked bacon, chopped
  • yoghurt: 1 tbsp Greek-style yoghurt

Method

  1. Heat the oil and butter in a pan and gently fry the onion and garlic until softened, about 3-4 minutes.

  2. Pour in the vegetable stock and bring to a gentle simmer. Add the cream and the watercress, stir well and bring to a simmer. Allow to cool slightly, then blend with a hand-blender until smooth.

  3. To serve, place the chopped bacon into a pan and fry until crisp.

  4. Pour the soup into a shallow serving bowl. Garnish with a dollop of yoghurt and sprinkle over the bacon.
