Savoy cabbages are a particularly popular kind, with crisp juicy crinkled leaves and very solid hearts with little waste. Older varieties were regarded as winter cabbages, very hardy and some of the last to mature, whereas modern hybrids such as 'Wivoy' have been crossed with other types to develop fast for early use, with lighter semi-savoy leaves and milder flavour. Both kinds should be sown for a long season of use. 'Wivoy', ready January to April, is a large-headed, disease-resistant variety recommended for general use.
