Coriander is a fast-growing and well-known flavouring, and one of the traditional Passover bitter herbs. Most plants are dual-purpose, grown both for their pungent leaves (lower and upper leaves have subtly different flavours) and the warmly aromatic seeds, which have been used since early Egyptian times. Strains have been selected for improved leaf or seed production. Frequent use encourages more fresh young leaves but be prepared to sow another batch as it is difficult to have too much coriander in the garden.
