During the war, a rocket or landmine dropped at Highbury Corner. I had just left school (at 16 years old), and I was in between starting work and school. My older sister was doing war work at a factory nearby.

At that time we used to meet every day to go to Highbury Corner to have our lunch. As I was just getting interested in cooking, one day I said to her, ‘how would you like to come home for lunch and I’ll cook us spam fritters?’. We were at home eating spam fritters when we would normally be at Highbury Corner, so for all I know, that saved our lives!

Spam fritters: Make a batter mixture (using whatever ingredients you have, e.g. flour, butter, milk), slice the spam, dip it in the batter and fry it in hot fat.
