Yvonne's Breakfast Hacks

SMOOTHIE

Ingredients

  • 80g frozen blueberries or any berries
  • 80g of frozen chopped bananas
  • 80g of frozen cauliflower rice
  • 550ml of any type of milk
  • 1 heaped tbsp of nut or seed butter
  • 1 tbsp of maple syrup
  • 1/2 inch of grated fresh ginger

Method

  1. First blend the cauliflower up to make a rice texture before adding all of the ingredients into a blender.
  2. Add all of the ingredients in a blender and blend until smooth! Top Tip: if the smoothie is too thick, add more milk for a desired texture.

OVERNIGHT OATS

Ingredients

  • 85g rolled oats
  • 1 tbsp chia seeds
  • 1/2 tsp cinnamon powder
  • 1 grated carrot
  • 200ml milk (use plant based milk if necessary)
  • 2 tbsp full fat yoghurt
  • 1 tbsp maple syrup
  • 2 tbsp mixed seeds and sultanas for mixture
  • 1 tbsp mixed seeds and sultanas for toppings

Method:

  1. In a container, add all the ingredients, and mix well鈦
  2. top up with mixed seeds and goji berries (1 tbsp)
  3. Refrigerate for at least 2 hours - for best results, refrigerate overnight & you can prep these for up to 3 days at a time.

SCRAMBLED EGGS

Ingredients

  • 1 Cube of butter
  • 2 eggs
  • Tbsp water

Method

  1. Start by heating your pan to a medium/high temperature before adding in your butter.
  2. In a measuring jug, mix together your eggs and milk.
  3. Once the butter has melted, add your egg mixture to the pan.
  4. Using a spatula, swirl from top to bottom, then back up, then sideways, then swirl around. You can also use chopsticks to swirl round and round.
  5. Cook for 1-2 minutes and then serve with your favourite toast.
