Anna's Sweetcorn Fritters
A delicious and cheap recipe using tinned food.
INGREDIENTS:
- 1 tin of sweetcorn
- 1 tin of butter beans or chickpeas
- 1 egg
- 4 heaped tbsp plain flour
- 1 tin of tuna
- 2 pinches of salt (1/2 tsp)
- 1- 2 tbsp oil
METHOD:
- In a bowl add your tinned butterbeans or chickpeas, sprinkle with the salt and mash with your hands or a potato masher until most of the beans are crushed and broken up.
- Next - add the tinned sweetcorn and tinned tuna then combine with a spoon.
- Once mixed together, crack the egg into the same bowl and stir together.
- Once the egg is mixed together with the tinned ingredients, add the flour and combine until all of it sticks together and forms a batter-like consistency, ready to make your fritters.
- In a pan on a medium heat, add your oil. To check it's hot drop a small amount of the fritter in the pan to see if it sizzles.
- Finally - When the pan is hot, mould your fritters with your hands into a small burger/patty shape then add to the pan ( this mixture should make 4 good sized fritters).
- Cook for 1-2 minutes on each side or until golden brown, then serve and enjoy!.
