Hash brown, millionaire bacon and egg pizza

Hash brown

4 medium rooster potatoes

1 heaped tablespoon plain flour

1 egg

Good pinch salt

2 tablespoons cooking oil

Boil the potatoes for 10 minutes then drain and cool.

Coarsely grate and mix in the flour, egg and salt.

Heat the oil in a pan and add the mixture. Flatten to fill the whole pan.

Cook for 2 minutes and then flip over and cook for 2 minutes on the other side.

Millionaire Bacon

6 rashers dry cure streaky bacon

2 teaspoons brown sugar

Pinch nutmeg

Pinch allspice

Place the bacon on a lightly oiled baking tray.

Mix the sugar with the spices and rub into the bacon.

Cook in a hot oven until crisp.

Tomato compote

1 onion, peeled and sliced finely

1 tablespoon cooking oil

1 punnet cherry tomatoes, halved

2 tablespoons tomato ketchup

2 teaspoons balsamic vinegar

Cook the onion in the oil until golden and soft.Add the tomatoes and pinch of salt and cook for 2 minutes.

Add the ketchup and vinegar and cook for a minute.

To Assemble the pizza

4 eggs

100g grated cheddar

Spoon the tomato compote all over the hash potatoes.

Chop the bacon and scatter over.

Crack 4 eggs into the middle and scatter over the cheese.

Bake in a 200oc oven for 5 minutes or until eggs to your liking.
