Frittata
Ingredients
4 eggs
1 Onion
1 Courgette
1 clove of garlic
1 small pack of tender stem broccoli
Handful of peas
Handful of spinach leaves
1 tbsp of dill
1 tbsp of parsley
1 tbsp of chives
Handful of feta
Salt
Pepper
Method
Prep your veg by chopping the broccoli into even pieces
Grate half your courgette and chop the other half into rounds
Mince your garlic and finely slice your onion
Put the broccoli into a pan of boiling water and cook for 1 minute before adding in the peas and cooking for a further minute
Take them off the heat and rinse with cold water before plunging into a bowl of iced water
Wilt the spinach by placing into a colander and pour boiling water over the top. Squeeze out any excess water
Using an oven proof pan on the hob, fry off your onion, garlic and grated courgette
Once onions are soft, take pan off the heat
Remove a few pieces of round courgette to decorate at the end
Crack 4 eggs into a dish and beat
Add some dill, chives and parsley
Add a pinch of salt and pepper
Heat up the frying pan and add half of broccoli, peas and spinach to the rest of the veg
Pour the egg mixture into the pan making sure to get to the edges and fill in any gaps
Lower the heat so the bottom doesn’t burn
Place the extra pieces of veg on top to decorate
Crumble the feta on top
Pop the pan under the hot grill for a couple of minutes, until the cheese melts and is golden
To check its ready, press down with your finger. If it bounces back, it’s ready
