Italian Sausage Pizza
Italian Sausage Pizza with Kale and Roast Onions
(Makes 2 large pizzas)
Pizza Dough
400g strong bread flour
½ teaspoon salt
1 sachet dried yeast ( 7g)
2 tablespoons olive oil
1 tablespoon honey
Mix the flour, salt and yeast in a bowl and make a well in the middle.
Whisk the honey and oil with 325ml of lukewarm water.
Pour into the middle and mix to a dough.
Turn onto a floured surface and knead for 5 minutes. Place in a lightly oiled bowl and cover with a clean teatowel. Leave at room temperature for an hour.
Tomato Sauce
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
100ml red wine
250ml passata
1 small tin chopped tomatoes
Salt and pepper to taste
Cook the onion and garlic in the oil until soft and golden.
Add the wine and cook for 2 minutes. Add the passata and tomatoes, season and simmer for 20 minutes.
Italian sausage
500g butcher sausage
1 teaspoon fennel seeds
1 clove garlic, minced
1 teaspoon minced red chilli
1 teaspoon chopped fresh rosemary
Split the skin of the sausages and place meat in a bowl.
Crush the fennel seeds and mix into the meat with the remaining ingredients. Roll into small bite sized balls.
Place on a lightly oiled baking tray and cook for 10 minutes in a 180oc oven or until cooked through.
Roast Onions
4 small onions
1 tablespoon olive oil
Few sprigs rosemary
Salt
Peel the onions and cut in half through the root.
Place on a sheet of foil and drizzle over the oil. Season with salt and add the rosemary.
Gather up the foil and roast in a 180oc until soft – about 40 minutes.
250g kale, picked
2 balls mozzarella
250g grated sharp cheddar or parmesan
Bring a pot of salted water to the boil and cook the kale for 3 minutes. Cool in iced water and drain well. Pat dry.
To Assemble –
Knock the air out of the dough and place on a lightly floured surface.
Divide the dough in two and set oven to 210oc.
Roll the dough into 2 circles and place each on 2 lightly floured baking trays.
Spoon the tomato sauce over the top, leaving an edge on the border.
Scatter over kale and the Italian sausage balls.
Break the onions into “petals” and scatter over the pizza.
Slice the mozzarella and dot over the top.
Sprinkle over the grated cheese.
Cook for about 12-15 minutes or until the dough is crisp.
Slice and serve.
