Suath an fheòil-mhairt le ola agus cuir air muin na h-uinneanan.
Cuir pailteas salann air an fheòil, gu h-àraidh air a’ gheir.
Sèasan le piobair.
Ròst san àmhainn aig 220°C airson 30 mionaid.
Cuir teas na h-àmhainne sìos gu 150/160°C agus ròst airson 12 mionaid gach punnd airson bruich meadhanach.

2 sprigs of thyme
Head of garlic
Red & white onions, chopped
Vegetable oil

Place the onions in a roasting tin.
Rub the beef with oil & place on top of the onions.
Liberally salt the meat, especially the fat.
Season with pepper.
Roast in the oven at 220 for ½ hour.
Turn the temperature down to 150/160 degrees and continue to cook for 12 minutes per lb for medium.
10 minutes per lb for rare
15 minutes per lb for well done
