Baked Spiced Apples with Italian figs

Baked Spiced Apples with Italian figs, Greek yoghurt and Spanish rosemary honey.

8 medium eating apples

75g butter

50g brown sugar

2 tablespoons honey

75g chopped dried figs

2 tablespoons raisins

4 tablespoons oats

50ml Apple juice or cider

Scoop the middle of the apple out, at the top, with a melon baller. Melt the butter, honey and sugar in a pan and add the oats, figs, raisins and vanilla.

Spoon into the apples.

Place in a baking dish and pour in the apple juice. Cover with foil and bake until soft - about half an hour.

Serve with Greek yoghurt sweetened with honey.
