Here's what you'll need to feed a family of 4:

  • 4tsp dark soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp peanut butter
  • 2 tbsp sriracha, plus extra to serve
  • 400g medium egg noodles
  • 2 tbsp nut oil
  • 600g raw peeled king prawns
  • 200g Pak Choi, quartered
  • 6 cloves garlic, finely chopped
  • 2 spring onions, finely chopped
  • Sesame seeds to serve

And here’s how to make it:

  1. Whisk the peanut butter, oyster sauce, sriracha soy sauce and 6 tablespoons of water together until smooth.
  2. Cook the noodles for 4-5 minutes or until al dente in a pan of boiling water. Drain and set to one side.
  3. Meanwhile, heat the wok until smoking and add the oil. Throw in the prawns and stir-fry for a couple of minutes until just cooked. Add the pak choi and continue to stir-fry for 2-3 minutes until tender. Add the garlic and stir-fry for 30 seconds until fragrant.
  4. Put the noodles and sauce into the wok. Add a few tablespoons of water and stir-fry for a minute or so until everything is completely coated.
  5. Divide between four bowls and garnish with the spring onions and sesame seeds. Grab your chop sticks and dive in!
