To make lunch for two people, you will need:
- 2 tins of sardines in oil
- 3 tsp soy sauce
- 2 tsp white wine vinegar with a tsp of sugar
- 2 tsp grated ginger
- Basil leaves – chopped finely
- 2 tsp sesame seeds
- 4 chives – chopped finely
- Lemon zest
- Sriracha or tabasco for an extra kick
- Sprinkling of parmesan cheese
- Toasted tiger bread with melted butter
- 4 gem lettuce leaves
Here's how you make it:
- Add the drained sardines to bowl and carefully chop them. Avoid mashing as you want to keep some texture, then set aside.
- Add a teaspoon of sugar to the white wine vinegar and give it a mix. Then combine the soy sauce and white wine vinegar in a medium-sized bowl, then grate your ginger and whisk until combined.
- Add the whisked sauce to the bowl of chopped sardines and fold into the mixture, then add the sesame seeds and chop your basil then add to the filling.
- Grab your toasted, buttered bread and assemble the sardines mixture on top.
- Chop your chives finely, then grate some parmesan cheese and lemon zest on top. Serve with fresh gem lettuce leaves for an extra crunch. Nutritious, delicious and affordable for an easy lunch option!
