John's Creamy Tzatziki
Ingredients (serves 6):

· 1 cucumber
· 500g Greek yoghurt (10% fat)
· 2 handful of mint leaves, finely chopped
· 2 cloves garlic, grated
· zest and juice of a lemon
· 2 tbsp extra virgin olive oil, plus extra for drizzling
· 1 tsp dry mint
· salt
Method:
1. Grate the cucumber using the course side of a cheese grater. Place into a clean cloth and wring out the moisture.
2. Chuck the cucumber into a bowl and add the yoghurt, nearly all of the mint, garlic, lemon zest and juice, olive oil and a good pinch of salt. Mix well. Check the seasoning adding salt to taste.
3. Transfer to a serving bowl and drizzle over a little oil. Add the dry mint and remaining fresh mint and face plant in it
