Yvonne's Sausage Stew

Serves 4 people

Ingredients:

  • 8 sausages, cut up into pieces prior cooking.
  • 2 red onions, chopped.
  • 1-2 tbsp any flour.
  • 1 tin of butter beans (or any other pulses), drained & washed.
  • 2 carrots, sliced and cooked (or any leftover veg you have).
  • 1 tin chopped tomatoes.
  • 1-2 tsp moroccan spices - can buy pre-made moroccan spices or a blend of spices you already have in the cupboard like cumin, turmeric, ginger, cinnamon, paprika, ground coriander & black pepper.
  • 2 beef or chicken stock cubes.
  • 2 tbsp balsamic vinegar.
  • 100ml boiling water.

Method:

  1. Add a little oil in a large deep frying pan.
  2. Add the cut up sausages, and fry until browned.
  3. Add the red onions and fry until soft.
  4. Add the flour and mix well together. This thickens the sauce.
  5. Add the drained butter beans.
  6. Sprinkle in the spices and gently mix.
  7. Add the chopped tinned tomatoes and balsamic vinegar, and then sprinkle in the stock cubes.
  8. Mix together gently, and add little water to loosen it up.
  9. Add cooked leftover vegetables.
  10. Serve with brown rice and steamed broccoli.
