Yvonne's Black Bean Burgers & Sweet Potato Fries
Black Bean Burgers (Serves 4-6):
Ingredients:
- 600g of black beans, drained, rinsed, and patted dry
- 1 tbsp vegetable oil
- 1/2 of finely chopped bell pepper
- 1/2 finely chopped brown onion
- 2 garlic cloves, minced
- 1 and 1/2 tsp ground cumin
- 1 tsp chili powder
- 1/4 tsp smoked paprika
- 60g breadcrumbs (or oat flour)
- 2 large eggs
- Bread rolls
- Cheese slices
- 2 tbsp tomato ketchup (or mayonnaise, BBQ sauce...)
- Salt/ pepper
Method:
- Firstly, you want to bake your black beans. Spread 600 grams of drained beans onto a sheet of baking paper and pop them into the oven for around 15 minutes at 180C. If you're air frying, place the beans them straight into basket and cook for around 10 minutes at 200C, stirring halfway through. (note - do not use baking paper). Once baked, add your beans into a food processor to give them a good pulse.
- Add oil of your choice to a frying pan over a medium heat. Add chopped pepper and onion, adding your garlic last. Cook until fragrant.
- Place your onion, pepper and garlic into a large bowl. Then, add cumin, chili powder, smoked paprika, ketchup, eggs, breadcrumbs, salt and pepper. (Remember - breadcrumbs can be swapped for oats to accommodate for dietary requirements). Add your black beans, and lightly mash the mixture together with a fork, leaving some larger chunks of beans.
- Form into patties around 3/4 inches thick
- In a non-stick skillet on a medium heat, add oil before cooking the patties for 5 minutes on each side, turning when browned and crisp.
- Serve inside a brioche bun with the top and bottom buns spread with a condiment of your choice, like mayonnaise. Add as many trimmings as you wish!
Sweet Potato Fries (Serves 4):
Ingredients:
- 2 sweet potatoes
- 1 tbsp olive oil
- 1/2 tsp mixed herbs
- 1 tsp smoked paprika
Method:
- Peel the sweet potatoes and slice into ½ cm sticks.
- Place them in a bowl of cold water with ice. Soak for 30 minutes and then pat dry.
- Drizzle over the oil and give them a good toss to coat. Sprinkle over the paprika, mixed herbs and ½ tsp each of salt and pepper, then give it all a good mix with your hands to ensure it's evenly coated.
- Place them in a single layer in your air fryer basket at 180C for around 10-15 mins, until lightly golden, giving a little shake or toss after 5 minutes.
