Tartiflette

Ingredients
500g maris piper potatoes peeled and sliced (1/2cm thickness)
2 medium white onions finely sliced
1 large garlic clove minced
200g smoked bacon lardons
1 tbsp salted butter
Salt and pepper
Large splash of water
Approx. 100ml full fat milk
300g of camembert or a soft washed rind cheese
100g gruyere cheese cut into strips or grated

Method
Preheat the oven to 170 degrees
In a large saucepan full of water, place in put the slices of potato and bring up to the boil
Reduce the heat and simmer for 10-15 minutes
They should be just done enough that a skewer can pierce them, do not overcook or your potatoes will turn to mush
Strain through a colander and leave the potatoes to one side
In a frying pan, fry off the bacon lardons for 2-3 minutes, then in the same pan slowly cook the onions and garlic until they are translucent which should take around 10 minutes
Slice your camembert into strips
Now place a third of the slices of potatoes at the bottom of a cast iron pan or oven proof dish
Then layer half of the onion and bacon mixture over the top and a third of the cheese strips
Repeat the process until you’ve run out of ingredients with a final layer of potato and cheese on top
Pour the milk into the dish
Bake for about 30-40 min until golden and bubbly
Serve with charcuterie, pickles, green salad, bread and wine
