Koftas with chickpea cream and spiced yoghurt
Koftas
Ingredients
- 250g minced lamb or beef
- 200g minced pork
- 1/2 onion finely chopped
- Handful chopped parsley
- 2 cloves garlic minced
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 medium potato coarsely grated
- 1/2 teaspoon salt
- 1 tablespoon cooking oil
Method
Mix all the ingredients apart from the potatoes and oil really well.
Press the potatoes in a sieve to remove as much of the moisture as possible. Dry with kitchen paper and mix into the other ingredients. Form into 8 fat sausage shapes and brush with oil.
Cook on a hot griddle pan or bbq for about 4 minutes each side.
Chickpea Cream
Ingredients
- 1 X 400g chickpeas drained well
- 1/2 onion, finely chopped
- 1 clove garlic minced
- 50ml olive oil or rapeseed
- 1 tablespoon sesame seeds
- Salt to taste
- Juice 1 lemon
- 25ml water
Method
Cook the onion and garlic in a tablespoon of the oil until soft and golden.
Add the sesame seeds and cook for 30 seconds.
Add remaining oil, lemon juice and water and blend to a smooth puree.
Check the seasoning.
Spiced yoghurt
Ingredients
- 200g Greek yoghurt
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 1 teaspoon Garam masala
- 1 tablespoon oil
Method
Gently cook the spices in oil for less than a minute.
Mix into the yoghurt and season with salt and pepper to taste.
To assemble, spoon a quarter of the chickpea onto 4 plates.
Place 2 koftas on each.
Drizzle over the spiced yoghurt.
Garnish with coriander leaves, mixed seeds, pomegranate seeds and a drizzle of oil.
