Yvonne's Creamy Marmite Chicken
Read below for Yvonne's unique take on a mid-week classic!
Yvonne says: "You’ll either love or hate this dish … but I’m confident I can win you, and your family over. It’s super simple, adaptable, and most importantly delicious – my family fell head over heels!"
Ingredients (Serves 4):
- 1 tbsp olive oil
- 1 large onion, finely sliced
- 3 garlic cloves, crushed
- 2 chicken breasts, sliced in halves
- 250g chestnut mushrooms, sliced
- 2-3 heaped tsp Marmite / alternative yeast extract
- 250 ml boiling water
- 180g cream cheese
- Freshly ground black pepper
Method:
- Add one tablespoon of olive oil into your pan and place over a medium heat. Add the onion and garlic and cook gently for 5 minutes, until softening and golden.
- Add the sliced chicken breasts and cook for 2-3 minutes on each side, until lightly browned.
- Add the mushrooms and cook for 5 minutes, until the juices have released.
- Place the Marmite in a measuring jug and add the boiling water. Stir until dissolved, then add to the frying pan.
- Simmer, uncovered, over a medium heat for 10 minutes.
- Turn the chicken breasts over and loosely cover with a lid or kitchen foil. Simmer for a further 10 minutes, or until the chicken is cooked and white throughout.
- Remove the frying pan from the heat and stir in the cream cheese until completely blended. If the sauce is too thin, continue to simmer, uncovered, for a bit longer, until the sauce has reduced and thickened to your liking. If the sauce is too thick, stir in a little water
- Taste and season with black pepper if needed.
- Sprinkle with roughly chopped flat leafed parsley and basil leaves to garnish, and serve alongside Mashed Sweet Potatoes and Garlic Green Beans, or other accompaniments of choice.
Yvonne's Sweet Potato Mash:
- Peel sweet potatoes and place in a bowl of water to cool in fridge - overnight is great!
- Boil and mash with a tablespoon of cream cheese depending on desired creaminess, cracked black pepper and sea salt.

Yvonne's Top Tips:
- If, like me, you want your mushrooms to be extra crispy - cook them alongside the onions and garlic (don't stir them). Remove them from the pan, and then cook your chicken breasts before adding them back into the mixture along with your Marmite mixture.
- Slice two chicken breasts in half to create four pieces - perfect for a four-person household.
- If you want to add extra seasoning, try a sprinkle of sage and dried parsley and stir well before covering.
- Use a small sharp knife to cut into the thickest part of the chicken to check whether it is cooked. Remember there should be no pinkness and the juices should run clear.
- If you want to thicken your sauce, try adding grated cheese or a spoon of cornflour mixed with water. To loosen, add a dash of water and stir.
- You won't need to season your chicken dish with salt as Marmite is already salty in flavour.
