Briony's Broccoli Three Ways

Roasted Broccoli on a Butter Bean Spread

Ingredients:

  • 200g purple sprouting broccoli
  • 400g tin butter beans, drained
  • 2 tbsp plain yogurt
  • 1 clove garlic
  • Juice of half lemon
  • 2 tbsp olive oil
  • 3 tsp smoked paprika
  • 1 tsp mixed spice
  • Handful mixed seeds

Serves 2-4

Method:

  1. Chop the broccoli into chunks, including the stalk, toss in a bowl with some olive oil, salt and pepper
  2. Cook at 180C in the air fryer for 4 minutes or in the oven for 10-15 minutes.
  3. Place the drained butter beans, yogurt, garlic, lemon juice, olive oil, paprika and mixed spice in a blender and blitz until smooth (or use a stick blender).
  4. Spread the butter bean mixture over your serving plate then top with the broccoli and mixed seeds.

Chopped Broccoli and Apple Sandwich

Ingredients:

½ head broccoli
100g garden peas
Handful fresh spinach/rocket
1 stick celery
5 cherry tomatoes
1 small apple
6slices sourdough bread

Dressing:

2 tbsp plain yogurt
1 tsp smoked paprika
1 tsp honey

Serves: 2-4

Method:

  1. Mix the dressing ingredients together in a bowl.
  2. Place all the veg on a board and chop until fine and mixed.
  3. Add the dressing and chop for a further minute, mixing as you go.
  4. Use as a delicious sandwich filling or a yummy salad.

Super Greens Pasta Sauce

Ingredients:

  • 375g broccoli
  • 100g frozen peas
  • 1 clove of garlic
  • Handful fresh spinach
  • 5g fresh basil
  • 3 tbsp plain yogurt
  • 50ml olive oil
  • Juice of half a lemon
  • 2 tsp mixed herbs
  • 100ml boiling water

Serves 4-6

Method:

  1. Chop the broccoli into chunks, including the stalk, toss in a bowl with some olive oil, salt and pepper.
  2. Cook at 180C in the air fryer for 4 minutes or in the oven for 10-15 minutes.
  3. Place the peas in a mug, cover with water and put in the microwave for 3 minutes then drain.
  4. Place all the ingredients in a blender (or a bowl and use a stick blender) and blitz until smooth.
  5. Serve with cooked pasta.
