Soda Pizza with Potatoes, Caramelized Onions & Bacon
Soda Bread base
350g plain flour
½ teaspoon salt
1 teaspoon baking soda
300ml buttermilk
1 tablespoon olive oil
Method
Mix the flour, salt and baking soda in a bowl and make a well in the centre.
Add the buttermilk and oil and mix to a dough.
Place on a floured surface and roll out to a centimetre thick. Place on a lightly oiled baking sheet. Set oven to 200oc.
Topping
50g smoked bacon lardons
1 tablespoon oil
2 small onions, peeled and finely sliced
1 teaspoon sugar
1 tablespoon balsamic vinegar
100ml passata
1 medium potato, scrubbed
100g grated cheese
Method
Cook the lardons in the oil until golden and crisp.
Add the onions and cook until golden and soft.
Add the sugar and vinegar and cook for a further minute.
Season with salt and pepper.
Spread passata over the top of the base, leaving a border around the sides.
Spoon the onion mixture on top.
Slice the potatoes as finely as you can and spread all over the onions.
Top with the cheese and place in oven.
Cook for about 20 minutes or until golden and potatoes are cooked through.
