Crispy squid with lemon and dulse mayonnaise
350g squid, cleaned and cut into strips
1 clove garlic, crushed
125ml milk
75g self raising flour
Oil for frying
Zest and juice 1 lemon
1 tablespoon finely chopped dulse
2 egg yolks
1 teaspoon Dijon mustard
100ml rapeseed or olive oil
Soak the squid in the milk and garlic for 20 minutes. Remove from milk. Season the flour with salt and toss in the squid. Remove excess flour.
Heat half a thumb depth of oil in a pan or set your fryer to 170oc.
Cook them squid until golden - about 3 minutes. Do this in batches rather than overcrowd the pan. Drain and place on kitchen paper.
Whisk the egg yolks, lemon zest and juice and mustard together until thick ( best with electric mixer). Drizzle in oil while whistling. Add dulse and check seasoning.
