Anna鈥檚 Larb Gai Chicken Salad
Ingredients:

4 heads of baby gem lettuce
400g of minced chicken
1 tablespoon of cooking oil
1 lime, juiced
1 stem of lemon grass
3 kaffir lime leaves
2 tablespoon of khao khau (toasted rice powder)
2 tablespoons fish sauce
2 cloves garlic, crushed
3 scallions, chopped
1 bunch coriander, chopped
1 bunch mint, chopped
2 bird eyes chillis, chopped
1 tbsp of crushed dried chilli
1. Cook your chicken mince in a pan on medium to high with a little bit of water.
2. Once cooked, break up the mince with a wooden spoon.
3. In a large bowl, mix all your ingredients together, except the lettuce leaf. Mix and taste, adding sugar, lime and fish sauce to balance it out.
4. Serve in a lettuce leaf.
