Anna's Cucumber Salad & Smoothie
Cucumber Salad
- 1 pack baby cucumber
- 1 garlic clove
- 2tbsp sesame seeds
- 1/4tsp chilli flakes
- 1tsp sweet paprika
- 1tbsp honey
- 1tbsp white wine vinegar
- 2tbsp olive oil
- Salt
- Spiral-cut your cucumbers by laying out two chopsticks and cutting one side at a 90-degree angle and the other side at a 45-degree angle.
- Coat the spiral-cut cucumbers with salt in a bowl and leave them for 30 minutes, the salt will draw moisture out of the cucumber and make them more tender.
- Rinse the cucumbers with leave them to soak in water for 30 minutes, wash again, squeeze and set aside.
- Add olive oil, minced garlic, sweet paprika, chilli flakes, sesame seeds, honey and vinegar to a bowl and mix.
- Add your spiral-cut cucumbers to the bowl and mix, serve with herbs.
Cucumber smoothie with an optional kick!
- 1/2 cucumber
- 1 apple or pear peeled
- 1 thumb sized ginger
- Small handful washed kale or spinach
- 1 cup apple juice
- Ice
- Scrape the skin off a thumb-sized nub of ginger using a spoon and chop roughly
- Peel a pear or apple, cut out the core and chop roughly
- Chop half a cucumber
- Add all to a blender with a handful of washed kale/spinach
- Add 1 cup of apple juice and blend
- Serve over ice and finish with a squeeze of lime juice, a slice of chilli or a sprinkle of cayenne pepper for an extra kick!
- Any leftover you could pour into an ice lolly mould for a refreshing summer treat.
