Shellfish and seaweed. Once a vital part of the Highland economy, the dramatic down-turn in the seaweed industry at the beginning of the 19th century set the scene for the infamous clearances. With many evicted people forced to subsist on a starvation diet of mussels and winkles, shellfish acquired a reputation as 'poor food'. But now shellfish has become fashionable and exports are a vital part of the economy of the north.
