Adam Henson goes on a mission to collect the ingredients to make a pizza for his family's evening meal - all from within ten miles of his Cotswolds home.
In this edition of Countryfile, Adam Henson ventures no more than 10 miles from his Cotswolds farm as discovers the delights of the local food available right on his doorstep. His mission is simple: he is to collect the ingredients to make a pizza for his family's evening meal. He visits a local flour mill for the dough for the pizza base, a local halloumi cheese maker and a man who makes meatballs from his herd of Hereford cattle. It is an unusual combination, so what his daughter Ella make of it?
Adam also delves back into the Countryfile archives to dig out the best of the foodie stories covered on the programme. Matt Baker and Ellie Harrison take each other on in the battle of the Yorkshire puddings, Julia Bradbury is on her home turf in Leicestershire tucking into stilton cheese and pork pies, Jules Hudson is out fishing off the Cornish coast for sardines and Katie Knapman discovers the unusual taste of Yorkshire sushi.

Adam’s Gloucestershire pizza
Adam Henson is on his home turf in Gloucestershire exploring the wealth of local food on offer. He’s been given a challenge to hunt down all the ingredients needed to make a pizza within ten miles of his farm. To make the base he heads to Stanway Watermill, a fully restored and working flour mill. Then he meets a man who is making local cheese with a Mediterranean twist and even finds a milk vending machine. Adam also meets Mathew Fort, food writer and ‘Great British Menu’ judge, to talk about what ‘local food’ means to him. After one more stop to find the meat for his pizza topping, he heads home to create the finished article with the help of his daughter, Ella.Ìý
Ellie, Matt & the Yorkshire puddings
There used to be windmills dotted all across the East Yorkshire landscape, providing flour to make bread for local communities. They’ve mostly gone now – but there is at least one in the area that still works.Ìý Ellie Harrison visits the four-sailed Skidby Mill, built in 1821, and finds out how its modern day miller, Neil Johnson, uses traditional techniques to produce local flour. Ellie then takes some of the flour away for a Yorkshire pudding ‘bake-off’ with Matt Baker. They meet Jon Edwards from London who uses science to create the perfect pudding. He goes head to head with, Mary Rook, a Yorkshire grandma who thinks her more relaxed and traditional technique will win the taste test. But whose pudding is best?
Cromer Crabs
Cromer is renowned for its delicious crabs. Fleets of crab & lobster fishing boats work from the north Norfolk coastline’s tidal harbours and open beaches to meet the demand from crustacean lovers. However, over the past 30 years, there has been a gradual reduction in long-standing fishing families and, as in the farming world, the age of fishermen is getting older. Ellie joins the crew of one boat to meet a 22 year old who’s bucking the trend. Then she cooks up her catch with chef Galton Blackiston from a nearby Michelin starred restaurant.
Julia in the ‘Rural Capital Of Food’
Julia Bradbury has a taste sensation when she samples the culinary delights of the Melton Mowbray area.Ìý In recent years it has been credited as the ‘Rural Capital of Food’ and the area certainly seems to live up to this accolade. Julia’s journey around the East Midlands takes her from the smallest Stilton dairy to an award-winning bakery and culminates with a family picnic.

Yorkshire sushi
When you think of Yorkshire and food what comes to mind? Crispy, light
Yorkshire puddings with roast beef? Pikelets or parkin with Wensleydale cheese?
Well, reporter Katie Knapman’s got another one for you – Yorkshire sushi!
Bushcraft expert, Chris Bax, goes foraging with Katie to create a taste of the Far
East in East Yorkshire using only locally sourced produce. But how will it
compare to Japanese gold standards? A trained sushi chef is on hand for a taste
test to see how it fares.

Too hot to handle
Adam’s taste buds are challenged by a man who’s cooking up a tropical storm in the Norfolk countryside, chilli sauce producer Glyn Kirpalani. Using an old family Trinidadian recipe he’s created three hot sauces and launched a community growing scheme to supply him with enough chillies to meet demand. The Holkham Estate Garden is helping out, cultivating several dozen Scotch Bonnet plants in its Victorian greenhouses. Adam meets the head gardener Tim Marshall and takes the opportunity to have a look at their livestock. Then he takes on Ellie is a ‘chilli challenge’.
The ‘rhubarb triangle’
Whether you love it or loath it we all have childhood memories of rhubarb. Julia visits the famous rhubarb triangle to discover the key factors that make this small area on the outskirts of Leeds so perfect for growing the vibrant vegetable. Julia meets local farmer Lindsay Hulme as he moves some huge rhubarb roots out of the frozen ground and into giant forcing sheds where their vibrant pink stalks grow up in search of light. Janet Oldroyd Hulme shows Julia why it is important for the sheds to be so dark and why harvesting is still done entirely by hand. Then TV Chef Simon Rimmer pops along to show Julia how to make the best of the seasonal rhubarb crop and rustle up some tasty treats.

Jules tells a fishy tale
Jules
Hudson faces his culinary fears when he meets up with international chef Sanjay
Kumar. He was drawn to Cornwall by its rich array of quality ingredients and
he’s been spicing up a once unfashionable Cornish fish, the sardine. After
cooking up a storm on the quayside Jules then treats Sanjay to a little
excursion, when he takes him out to sea to witness a modern Cornish fishing
trawler in action.
Matt visits Southwold
On the coast in the north of Suffolk lies the charming seaside town of Southwold. Matt visits the popular holiday destination as it gears itself up for the summer. Then he creates a novel flavour of ice cream with the help of a family-run dairy.
