Working under Theo Randall's tutelage, students from Brooklands College in Surrey cook a dish that reflects his core culinary principles, Italian squash tortellini.
Three of the UK's most renowned chefs are going back to catering college. Tom Kitchin, Theo Randall and Michel Roux Jr are each looking for a young student to take under their wing, someone they can mentor and inspire, who can eventually become their protege.
Top chef in Italian cuisine Theo Randall continues his quest as he meets four more of his old catering college's best students. Returning to where he trained - Brooklands College in Surrey - Theo sets each aspiring chef a simple test to assess their enthusiasm and level of skill. The students have the ingredients from his classic Italian antipasti sharing platter, including olives, tomatoes, anchovies, artichokes and buffalo mozzarella. They must show their knowledge of flavour combinations and preparation.
Before making any further decisions, Theo shows the four hopefuls how to cook a dish that reflects his core culinary principles - Italian squash tortellini. A tricky plate of food to master, as they face making their own pasta whilst ensuring they get the flavour of the filling just right.
Working under Theo's tutelage, the students recreate the dish before he decides who won't be continuing through to the next stage.
