Sloe Gin & Champagne Cocktail
ÌýThis is a delicious champagne cocktail, with a shot of sloe gin. ÌýFor a party, frost the rims of the glasses by dipping them in egg white & then caster sugar.

Sloe gin, bought or homemade

Put a small splash of sloe gin into champagne glasses & top them up with champagne.

Mulled Cider

Mulled cider is delicious, either warm or cold, & its relatively low alcohol content makes it ideal for a winter lunch party.

For 12-15 glasses
2.5L dry cider, still or sparkling
2 apples, washed, cored & sliced
3 oranges, washed & sliced
Zest & juice of 1 lemon
2 tsp ground mixed spice
10 cloves
3 cinnamon sticks, snapped in half
6 tablespoons soft brown sugar

Put all the ingredients in a pan & gradually heat, simmering gently for about 1hr. ÌýDo not let it boil. ÌýStrain & serve in heatproof glasses.

Rosemary Lemonade
Ìý
A last minute version of lemonade with a lovely flavour of rosemary. ÌýThe recipe comes from Darina Allen. ÌýParticularly at Christmas, it’s worth keeping some of the ‘stock syrup’ in the fridge for making cocktails (such as Pisco sours) & straight up lemonade. ÌýIf you’re making a batch, add rosemary to a small jar of it & then you can rustle this up in minutes. ÌýThere’s no citric acid in this lemonade, so use it within a few hours.

For 4-6 glasses
Freshly squeezed juice of 3 lemons
4-5 sprigs rosemary
Fizzy water, to taste

For the sugar syrup (makes 800ml)
450g sugar
Ìý
To make a sugar syrup without rosemary, dissolve the sugar in 600ml water & bring to the boil. ÌýBoil for 2-3 mins & allow it to cool. ÌýStore in the fridge until needed.

To make the rosemary syrup, add the sprigs of rosemary to the above recipe before you bring it to the boil. ÌýLeave it to cool & steep overnight & strain. ÌýThe recipe makes 800ml, which will give enough for several batches.

To make the rosemary lemonade, mix the lemon juice with 225ml rosemary syrup & fizzy water to taste.
