Corn Fritters, Grilled Chicken and Hot Buttered Corn
Corn Fritters
225g shucked corn (either fresh or drained tinned)
125g self-rising flour
陆 teaspoon salt
1 egg
100ml buttermilk
1 teaspoon toasted mustard seeds
2 chopped scallions
Oil for cooking

Blend 125g of the corn with the flour, salt, egg, mustard seeds and buttermilk. Fold in the remaining corn and scallions and leave for 10 minutes.

Lightly oil a frying pan, heat until medium hot and drop tablespoons of the mixture into the pan. When they bubble, flip over and cook for another minute.
听
Set aside in a warm oven while you cook the rest.
听
Grilled chicken
6 boneless, skinless chicken thighs
陆 teaspoon smoked paprika
1 dessertspoon oil
A pinch of salt

Rub the paprika, oil and salt over the chicken.
听
Heat a hot grill pan or barbecue and cook the chicken for 1 minute each side. Transfer to a roasting tray and cook at 180oc for about 20 minutes or until cooked through.
听
Hot Buttered Corn
2 ears of corn, boiled and shucked
1 onion, peeled and chopped
1 large stick celery, chopped into 陆 cm dice
50g butter
1 tablespoon cooking oil
4 chopped scallions
陆 chicken stock cube plus juices from cooking chicken
听
Heat the oil and half the butter in a saucepan and add the onion and celery. Cook on a low heat, covered for about 15 minutes or until soft and golden.
听
Add the corn, scallions and stock cube.
听
Cook for 1 minute and add the cooking juices and remaining butter.
听
Serve.
