Jak's Tuscan Bean Soup
- 500gr dried cannellini beans
- 1 thinly sliced prosciutto
- 1 finely chopped white听 onion
- 1 celery stalk, chopped
- 2cloves garlic , peeled and lightly crushed
- 1 bay leaf
- 1 ltr chicken stock
- 1tbsp olive oil
- Finely ground sea salt,
Topping
听1 large bunch of fresh basil leaves
2 garlic cloves crushed
1 录听 tsp dried chilli flakes
4 tbsp Extra virgin olive oil

1.听听听听听听 Soak the beans overnight if you have time, then drain & allow to sit in the warm chicken stock & prosciutto
2.听听听听听听 Soften the onion & celery & garlic in the oil add the bay leaf & season
3.听听听听听听 Tip the beans & stock into the onion mix and simmer very gently as not to burst the skins
4.听听听听听听 After 15-20 mins season again
5.听听听听听听 In a hot pan add the garlic & chilli & sizzling then wilt down the basil leaves
6.听听听听听听 If you wish the soup to be still chunky then serve with toasted ciabatta & basil mix
7.听听听听听听 If you want a smooth soup then blitz the mixture or even half & half
