Foodie Thursday: Cypriot Roast Chicken with Cumin Potatoes

Cypriot Roast Chicken & Cumin Potatoes

For the chicken
Ingredients
1 1.4kg (3lb) oven ready chicken
1 large buffalo tomato, sliced into 8 pieces
1 large onion, sliced
2 tbsp of extra-virgin olive oil
1陆 heaped tsp of dried oregano
1陆 heaped tsp of ground cinnamon
Sea salt & fresh ground pepper

Method
1.听Heat oven to 180C/ fan 160C /gas 4.
2.听Place chicken in roasting dish & rub with 1 tbsp of olive oil.
3.听Place tomato slices on breast & legs. 听Spread the onion rings & place all around chicken.
4.听Season with salt, pepper, oregano & cinnamon.
5.听Drizzle remaining olive oil over chicken & place in oven for 1陆 hrs or till juices run clear.

For the Cumin Potatoes
Cyprus potatoes are grown in distinctive clay soil, which makes them very nutritious & exceptionally tasty; there is no better potato in the world. 听You can find them in Greek, Mediterranean, Asian or Middle Eastern delis & larger supermarkets are now stocking them too.
听
The potatoes can be cooked in the same oven as the chicken, for the final hour, so put them in after 30mins & check to ensure they鈥檙e cooked through.
听

Cooking time: 1hr 10 mins

Ingredients
6 medium Cypriot potatoes (halved lengthways), or any other waxy potato such as Yukon Gold.
1 large onion, sliced into rings
2 tsp ground cumin
2 tsp ground cinnamon
2 tbsp extra-virgin olive oil
400g can plum tomatoes
Sea salt & freshly ground black pepper
听
Method
1.听Place the potatoes & onions in a large shallow roasting dish.
2.听Sprinkle on the cumin, cinnamon, salt & pepper, to taste & then drizzle with the oil. 听Toss together well.
3.听Use your hands to crush the tomatoes over the potatoes. 听Pour 200ml water into the base of the tin.
4.听Cover with foil & cook for 40 mins on 200C/ fan 180C /gas 6, then remove the foil & reduce the oven temperature to 180C/ fan 160C /gas 4 for another 20-30 mins or until the potatoes are tender.

鈥⑻齀f you want to track down Cyprus potatoes, many larger supermarkets are now stocking them, otherwise head for a Greek, Mediterranean, or Middle Eastern deli. Otherwise there are plenty of good British stunt-doubles
