Apple and Raspberry Queen of Puddings

Apple and Rasberry Jam

Ingredients

2 large cooking apples

200g raspberries (you could use fresh or frozen and substitute any berry)

100g sugar

Method

Peel, core and chop the apples and cook with the sugar until soft.

Add the raspberries and set aside.

Alternatively you could use jam instead.

Cake Mix

Ingredients

200g chopped Madeira cake or sponge

4 egg yolks ( reserve whites for meringue topping)

50g sugar

125ml whipping cream

250ml whole milk

1 teaspoon vanilla extract

Method

Set oven to 180oc and butter a baking dish.

Scatter the cake in the bottom.

Scald the cream and milk with the vanilla.

Whisk the yolks and sugar and pour over the hot cream mixture.

Whisk and pour over the cake.

Cook for 12-15 minutes or until set and wobbly.

Cool slightly and spoon the apple mixture over.

Meringue Topping

Ingredients

4 egg whites

175g castor sugar

Method

Whisk the whites to stiff peaks and add the sugar a little at a time while still whisking until fully incorporated.

Pipe of swirl over the apple sponge layer and bake in a 180oc oven for 6 minutes or until golden on top.

Serve while warm.
